my whole meat dept asks me to use this hone, it really works well love the extra fine cut! maybe the ring could be attached better but i really don't care to much about that
This keeps a good chefs knife SHARP!!!
I bought this steel when I purchased my first good chef's knife. My nephew is a butcher and uses this steel in his shop. If you start with a quality knife, this steel will keep it sharp with minimal maintenance. I was cutting tomatoes and noticed my knife was getting dull. Less than ten swipes on this steel had my knife slicing into the cutting board again. Man I love razor sharp knives.
